Cookies for Breakfast

If you haven’t already noticed, I kind of have a Trader Joe’s obsession. Their products are just so unique, good, and relatively inexpensive that I can’t help myself!

Case in point – last night’s dessert and today’s breakfast

TJ’s  Organic Soy Creamy Chocolate “Ice Cream” + Chocolate Cat Cookies crushed up

Thought animal-shaped cookies were only for small children? Think again.

That was my first time trying soy based ice cream and I really liked it! It was creamy and didn’t taste weird at all. I think I will be buying this in the future. Lovely way to end my night!

And today began with half a banana before the run…

Half Marathon Training Update WEEK 5

Wed. 8/4 – 6 miles easy. 5 acceleration strides. Legs felt pretty good today – also did 15 minutes of weights.

In my effort to try more of the awesome-looking recipes I see from other bloggers, last night I mixed up a Breakfast Cookie inspired by the Fitnessista’s recipe.

I’ve decided that I combine Chocolate and Peanut Butter far too often on my blog to start naming all of my recipes/foods using that full label, so I’m creating an official abbreviation for this very deserving fusion of flavors: CHPB (haha, doesn’t that kinda sound like a vaccine or something? We’ll see if it sticks) :)

* CHPB (Healthy) Overnight Breakfast Cookie *

- 1/2 c. old fashioned oats

- 1/2 scoop protein powder (I used cookies ‘n’ cream flavor but anything would work)

- 1 Tbsp. flaxseed meal

- cinnamon

- 1/8 c. milk

- 1 Tbsp. Chunky Teddie

- 1/2 a banana, mashed with fork

- a few TJ’s Chocolate Cat Cookies, crushed

Note: These measurements are approximate and should be based on the consistency of the batter – it needed to be thick enough to hold it’s shape but not quite cookie-dough like. If yours is too wet, add more oats/flax/protein powder, and if too dry, add a little more banana or milk.

All mixed together and formed into a large cookie on a plate.

Refrigerated overnight and voila

Another wonderful blogger creation! A little gooey but I liked that.

Half way through I added some Greek Yogurt which, combined with the sweet cookie, tasted like whipped cream! :)

Unfortunately, this didn’t really fill me up…at all. I’m not sure why. It seems very comparable to my usual breakfasts. I did come back from my run really hungry so maybe I just needed something extra this morning.

I knew I’d be hungry in an hour if I didn’t have something else, so I made a quick piece of toast with PB & J

Oh um and maybe I had a handful or two of Cat Cookies – they are addicting!

Who says you can’t have cookies for breakfast? ;)

  3. Umm…were we separated at birth?!?

    I pretty much ALWAYS have that exact soy ice cream and cat cookies in my house at all times. ALL TIMES.

    You literally could have taken that picture directly off my camera.

    And I may or may not eat both for dessert every night. totally fine.
