Another Episode of Friday Baking

Lunch today was leftover Chicken Piccata, a plum, & Odwalla bar

Plus an individual bag of Smart Pop popcorn from my stash at work. When I got home I had a cream cheese / blueberry spread wrap to satisfy my grumbling stomach before I started baking! I love baking because it instantly relaxes me.

A few days ago I noticed Chai Tea Scones on Meghann’s blog that looked delicious, which directed me to the original recipe from Julie’s blog, and I knew I wanted to make them. I’ve never made scones before, this looked like an easy and healthy recipe, and I had all of the ingredients. Plus, chai is one of my favorite types of tea!

I tried one of the smaller ones, and it was delicious!

The chai flavor was there but not overpowering, and they were moist and fluffy like scones should be. They took me almost no time to throw together, and I actually liked that the dough was kneaded with my hands :) It’s more fun that way!

While measuring the whole wheat flour, I got 2 cups and ran out, so I put in a 1/2 cup wheat bran to sub for the last 1/2 cup flour and they still tasted great.

I think using the turbinado sugar contributed to the texture and made them more scone-like, so I wouldn’t sub that out.

Chai Tea Scones

  • 2 c. whole wheat flour (original recipe had 2.5 c. and no wheat bran)
  • 1/2 c. wheat bran
  • 1/2 c. turbinado sugar
  • 2 Tbsp. baking powder
  • 2 Tbsp. ground flax seed
  • 1/4 tsp. salt
  • 1/3 c. canola oil
  • 1 c. almond milk
  • 3 bags chai tea

Preheat oven to 400. Stir together flour, wheat bran, sugar, baking powder and ground flax. Add the oil using your hands to knead it into the dry mix. Add the milk in 3 parts, kneading with your hands after each addition. Cut open the bags of tea and fold the tea into the dough until well distributed. Separate the dough into 2 halves, and place each on a greased baking sheet. Press down to flatten each one until about 1/2 inch thick. Cut both circles into 6 equal slices and then separate the wedges, leaving you with 12 scones. Bake 12-15 minutes at 400. Cool and enjoy!
