I absolutely love granola. I think it is one of the best, most satisfying (yet also addictive) breakfast/snack foods. But at $5 per small bag for the kind that I prefer, it gets way too expensive to buy on a regular basis. I’ve made homemade granola before, but last night I reminded myself just how easy it is!

Almond Flax Granola
Inspired by this Cooking Light recipe.
DRY
- 2 c. rolled oats
- 1/3 c. ground flax seed
- 1/2 c. shredded coconut (unsweetened)
- 3/4 c. slivered almonds
- 2 tsp. cinnamon
WET
- 1/3 c. orange-pineapple juice
- 1/3 c. blue agave nectar
- 2 tsp. Smart Balance oil blend
- 1 tsp. vanilla extract
OPTIONAL
- 1/3 – 1/2 c. dried cranberries
Preheat oven to 300 degrees. Coat a large baking pan with cooking spray.
Mix the dry ingredients in a medium bowl.

Whisk wet ingredients together in a small bowl.

Pour the dry mixture on the baking pan, then pour the wet ingredients on top of the dry.

Mix together gently until evenly distributed. Clump together with your fingers.

Bake at 300 for 10 minutes, stir gently, then bake an additional 15-20 minutes. Remove granola from oven, then stir in dried cranberries. Allow to cool before serving.

Store up to 2 weeks in an airtight container.

It came out crunchy and not too sweet. In addition to grabbing handfuls and eating with milk and yogurt, homemade granola makes a great topping for oatmeal

This was so quick to whip up last night – I will definitely be doing this more often.

Looks yummy! I want to start making my own hummus instead of shelling out $5 for a small container… it’s on my to-do list!
That’s another good one! I’m intimidated by the idea of making hummus, I’m not sure why. But right after I read your comment I saw this recipe (http://www.beantownbaker.com/2010/10/roasted-beet-hummus.html) for pink hummus and I kind of got excited! Maybe I’ll try making my own too…
