Whirlwind

I had a whirlwind of a weekend! Even though I was just home visiting my parents last weekend, I went home again this weekend to see my brother and sister (who were both home from college!)…and of course the pets.

My brother runs cross country in college, and he had a meet at SUNY Albany on Saturday.

I love watching Zak run – he’s fast. (He is the blur :) ).

Even more fun was having the entire girls and boys team (60 people) over to our house afterward! It was crazy. We had a lot to do to get ready…

It was so crazy that I did not even take pictures of the hour they were actually there – I can’t believe it. I guess I was too worried about running burgers and hot dogs from the grill to the house for hungry runners to devour. (Blogger fail – I especially wanted to document the huge bus parked outside our house!)

I do, however, have a very easy and delicious dessert recipe that I made for the party…

Smores Brownies

Start by mixing TWO of these in a bowl according to package instructions.

Break up 6 graham crackers and fold in.

Put in a sprayed pan and top with mini marshmallows (push them in as much as you can).

Bake for 35-40 minutes at 325 degrees.

I highly suggest making these! They sound a bit weird but taste like an extra chocolately and gooey smore!

We also made two dozen cupcakes. (Not to mention 50 burgers, 50 hot dogs, some sausages, chili, 3 lbs. baked ziti, a ton of potatoes, fruit salad, veggies with dip, and snacks – all of which I have no pictures of. Awwwesome).

Rosie, being the old and quirky dog that she is, will often refuse to eat her food until she’s walked, but sometimes it’s just to get attention.

My dad now plays a spit fire game with her to get her to eat, throwing the pieces at her one by one while she tries to catch them. It’s pretty funny :)

Before heading back to Boston today, I had a chance to meet up with some fantastic ladies from upstate NY while I was home :) My very first blogger meet-up! We had coffee and breakfast sandwiches at Coffee Planet – it was lovely meeting all of them.

It was great to see the parent and siblings again, watch a great college race, and meet some fantastic people!

    My weekend was wonderful- got to spend a lot of quality time with my best girlfriends! :)
