So far, it’s been a really productive (and crunchy) day – hopefully I can keep it going!
Before the sun was up this morning I got crunching away at my computer, writing grad school applications. (I am so much more productive in the morning).

Coffee always helps.

To fuel the writing process I made myself a sandwich with TJ’s raw crunchy almond butter. (Still my absolute favorite AB, out of any I’ve tried).

When I needed a break, I headed out for a gorgeous, chilly run outside.

So many leaves everywhere, crunching beneath my feet.

No counting miles or time – I think I went for about an hour? It felt awesome.

I even stopped listening to my ipod halfway through – the wind and the leaves were so much better to listen to

I swear sometimes (like today) when I run I must be engaging in some form of meditation, because I don’t remember exactly what route I took, what I saw, or what I was thinking about for an hour.


For breakfast #2 of the day, in honor of Caitlin (who is running a marathon today! Wahoo!), I made a Chocolate Walnut version of Caitlin’s (Crunchy) Pancake Truffles!

I followed her instructions exactly, besides replacing the cinnamon with cocoa powder and the pecans with walnuts.

My batter was so sticky I had to put the banana slices on the baking sheet first, spoon the batter on around the bananas, and then press the nuts into the tops. I was a little worried I did something wrong, but after 15 minutes in the oven they looked great!

Dessert for breakfast?! My favorite, These truffles were crunchy, filling, healthy, and delicious.

I didn’t feel like maple syrup today so I made my own “Chocolate Syrup” using almond milk, cocoa powder, and a little sugar.

If you haven’t tried making these, you really should! From start to finish it only takes 30 minutes, and it is so worth it. I bet these could easily be made in a pumpkin variety (for all of you pumpkin addicts out there).

I hope after her marathon Caitlin dreams up something else that’s this awesome
